This dish captures the luxury and indulgence of Valentine’s Day while staying true to authentic Chinese cooking techniques.

Ingredients :

For the Lobster:

2 whole lobsters (about 1.5 lbs each), cleaned and cut into pieces
3 tablespoons cornstarch (for coating)
1 teaspoon salt
1 teaspoon white pepper
Vegetable oil for frying

For the Garlic Butter Sauce:

4 tablespoons unsalted butter
6 cloves garlic (finely minced)
2 tablespoons Shaoxing wine (or dry sherry)
1 tablespoon soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1/2 teaspoon white pepper
1/2 teaspoon chili flakes (optional, for mild heat)
2 green onions (chopped, for garnish)
1 tablespoon cilantro (chopped, for garnish)

Directions :

Step 1: Prepare the Lobster
Pat the lobster pieces dry and coat them lightly with cornstarch, salt, and white pepper. This helps seal in moisture and creates a light, crispy texture when fried.
Heat vegetable oil in a deep pan or wok over medium-high heat. Once hot, carefully fry the lobster pieces for 3-4 minutes, turning occasionally, until the shells turn bright red and the meat is cooked through.
Remove from oil and set aside on a paper towel-lined plate to drain excess oil.

Step 2: Make the Garlic Butter Sauce
In a clean wok or skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant and lightly golden.
Stir in Shaoxing wine, soy sauce, oyster sauce, sugar, and white pepper, letting the sauce simmer for 1-2 minutes until well combined.
If you like a hint of spice, add chili flakes at this stage.

Step 3: Toss & Serve
Add the fried lobster pieces back into the wok, tossing gently to coat evenly in the rich garlic butter sauce. Cook for an additional 1-2 minutes, allowing the flavors to meld together.
Transfer to a serving plate and garnish with chopped green onions and cilantro.
Serve immediately with steamed jasmine rice or crispy noodles for an indulgent, restaurant-quality experience.
