Shanghai Scallion Oil Noodles is a classic Chinese comfort dish known for its rich savory flavor and fragrant scallion-infused oil. Simple ingredients like noodles, soy sauce, sugar, and green onions come together to create a surprisingly flavorful meal that’s both satisfying and easy to prepare. Popular throughout Shanghai, this noodle dish is perfect for quick lunches, light dinners, or comforting late-night meals.
Ingredients :
12 oz Chinese wheat noodles or thin egg noodles
6–8 green onions (scallions), cut into 2-inch pieces
1/4 cup vegetable oil
For the Sauce:
3 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon sugar
1 tablespoon water
Optional Toppings:
Soft-boiled egg
Sesame seeds
Sliced beef or chicken
Chili oil

Directions :
Prepare the Noodles:
Cook the noodles according to package instructions until tender. Drain and rinse lightly with warm water. Set aside.
Cook the Scallions:
Heat vegetable oil in a wok or large pan over medium-low heat. Add the scallions and slowly cook for 10–15 minutes until they become soft, golden brown, and fragrant. Stir occasionally to avoid burning.
Make the Sauce:
In a small bowl, mix together light soy sauce, dark soy sauce, oyster sauce, sugar, and water.
Combine the Sauce and Oil:
Pour the sauce mixture carefully into the pan with the scallion oil. Let it simmer gently for 1–2 minutes until slightly thickened and aromatic.
Toss the Noodles:
Add the cooked noodles into the pan. Toss everything together thoroughly until the noodles are evenly coated with the savory scallion sauce.
Serve and Enjoy:
Transfer to serving bowls and top with extra scallions, sesame seeds, soft-boiled egg, or chili oil if desired. Serve warm for a simple and comforting Chinese-style meal.
Tips:
Slowly cooking the scallions is the key to developing rich flavor and aroma.
Dark soy sauce gives the noodles their signature deep brown color.
Add protein like sliced chicken, beef, or tofu for a heartier version.
Chili oil or chili crisp adds extra flavor for spicy noodle lovers.
Fresh noodles work especially well for a more authentic Shanghai-style texture.
